Mushrooms of the Ryazan region in 2019
What mushrooms grow
Ryazan region, after the Moscow region, is the richest region in central Russia with mushrooms. Moderately dry summers, heavy rainfall in autumn, the presence of reservoirs and clean forests create favorable conditions for the growth of more than 100 species of edible mushrooms.
In 2019, the following edible and conditionally edible mushrooms will grow in the Ryazan region:
- white;
- Polish;
- milk mushrooms;
- boletus;
- aspen mushrooms;
- chanterelles;
- boletus;
- russula;
- mushrooms;
- goats;
- flywheels.
White, Polish white (brown boletus), boletus and boletus grow in mixed forests. They hide under trees, in berry bushes. Whites love hills. Butterflies are found mainly in coniferous forests.
Milk, boletus, boletus and boletus mushrooms are universal mushrooms. They have good taste and unique nutritional value. They are boiled, fried, pickled, dried and frozen.
Irina Selyutina (Biologist):
Returning from the forest, mushroom pickers bring home milk mushrooms, white and black. A white, or damp weight, has a milky white or yellowish cap. In young specimens, it is flat, but as the fungus grows, it becomes funnel-shaped with tightly wrapped edges and a small fringe on them. The thick leg is hollow, the pulp has a pleasant aroma. On the cut, acrid milky juice is released, which becomes yellowish in air. Leaves or soil particles often stick to the cap.
Black mushroom or nigella is a conditionally edible mushroom, the color of the cap of which can vary from dark olive to dark brown. It contains a large amount of white milky juice with a very pungent taste. It is usually salted, while the fruit bodies acquire a purple-burgundy color.
Both white and black mushrooms need to be soaked before further processing and thorough cleaning.
Honey mushrooms and chanterelles are better suited for salting. Butter vegetables complement soups, meat dishes with a pungent smell and taste.
Poisonous mushrooms
Amanita and toadstools grow in the Ryazan region. Amanita has a fleshy red cap with flocculent white formations on its surface. The leg is cylindrical, widened towards the base. Pale toadstools are owners of greenish or grayish hats, a cylindrical leg with a pouch at the base and a "skirt" under the hat. When damaged, the flesh of a toadstool does not change color, like that of edible mushrooms.
Amanita and toadstools are poisonous representatives of the mushroom kingdom. Poisoning is manifested by profuse vomiting, muscle pain, diarrhea (often bloody), toxic hepatitis. Death occurs 10 days after consumption.
False mushrooms are also widespread in the Ryazan region. Some species are poisonous, others are simply inedible. The description will help to distinguish edible mushrooms from false ones: filmy rings form on the legs of real mushrooms, and false mushrooms have smooth legs.
Inedible mushrooms smell unpleasantly of hydrogen sulfide, ammonia, and have a bitter taste.

Wild boars, wolves, foxes and snakes are found in the forests, so it is important to follow the rules of conduct so as not to provoke an attack. Ticks are also dangerous. It is imperative to go hunting in closed clothing, take protective equipment and vegetable oil with you in order to safely remove the insect.
Tips for beginners
To get only benefit from mushrooms, you must follow the rules of collection. Experienced mushroom pickers recommend going out into the forest in the early morning, especially in summer. The largest number of fruiting bodies is harvested 2-3 days after rain.
Mushrooms are harvested only with legs. It is by the legs that poisonous species are identified during sorting. If you decide to buy more mushrooms, pay attention to the fact that the caps must be with legs. If the seller's mushrooms are represented only by "heads" - refuse to buy. You will not be able to determine exactly what is in front of you - a poisonous or edible mushroom.
Do not eat old mushrooms, the caps of which have opened and released spores.
The harvested crop must be washed under running water. Conditionally edible mushrooms require cooking for 10-20 minutes, the broth is drained.
